This Whole-Wheat Pizza With Red Pepper Sauce Will Knock Your Socks Off

Who says pizza can't be healthy? When you need a break from delivery and are looking for a meal that won't blow your diet, try making this whole-wheat pizza with red pepper sauce. It's high in fiber, loaded with flavor, and easier to make than you'd imagine.

Ingredients (for the crust):

  • 1 cup all-purpose flour
  • 1 cup whole-wheat flour
  • ¾ cup warm water
  • 1 packet rapid-rise yeast
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 tablespoon olive oil

Ingredients (for the sauce):

  • 6 medium tomatoes
  • 1 red bell pepper
  • ¼ cup onion, sliced
  • 2 cloves garlic
  • ¼ teaspoon salt
  • 1 teaspoon sugar
  • 1 tablespoon fresh basil, minced

Ingredients (other toppings):

  • 2 cups shredded mozzarella cheese
  • 12 – 15 slices of pepperoni, or ½ cup cooked sausage

Directions:

Start by preparing the dough. Combine the yeast, sugar, and water in a bowl. Let rest for five minutes, and then stir in the remaining ingredients. Keep mixing until the dough forms a cohesive ball. Turn the dough onto a floured surface, and knead for 10 minutes. Then, place it in a greased bowl, cover the bowl with plastic wrap, and set it aside to rest for 30 minutes.

While the dough is resting, work on the sauce. Remove the stem ends, seeds, and peels from the tomatoes. Also remove the seeds and stem from the bell pepper. Place the tomatoes, garlic, pepper, and onion in a food processor, and process until smooth. Transfer the sauce to a medium saucepan, and add the salt and sugar. Bring to a simmer, and simmer for about 15 minutes or until thickened to a nice pizza-sauce consistency. Stir in the basil, and simmer for another 5 minutes.

When the dough is done resting, press down on it to release extra air. Then, shape it into a ball, and place the ball on a round pizza sheet. Let it rest for another 10 minutes, and then stretch it out into a 12-inch circle. Spread on the homemade sauce, and then add the cheese and pepperoni and sausage. (You can substitute different toppings if you prefer).

Place the pizza in a 400 degree F oven. Bake for 18 – 20 minutes or until the cheese is melted and bubbling. Let cool for 10 minutes before slicing and serving. Enjoy! The leftover are wonderful cold or when reheated for 10 minutes in a 350 degree F oven. If you don't have the time to make pizza yourself, consider getting pizza at a restaurant like Greg's Pizza instead.
